- three ripe and spotted bananas
- 1 cup + 3 tbsp of unsweetened plant-based milk - We used this almond milk.
- 1 tbsp of freshly ground flaxseed or flaxseed meal
- 1/4 cup of unsweetened natural peanut butter or another nut or seed butter
- 3 tbsp of pure maple syrup, raw agave syrup, or date syrup
- 2 or 3 pitted prunes or pitted Medjool dates
- 1 tbsp of apple cider vinegar or lemon juice
- 1 tsp of pure vanilla extract
- 1/4 tsp pink Himalayan sea salt or another salt
- 1/2 tsp of cinnamon
- 1 cup of old fashioned oats, GF certified as needed, ground into a coarse flour
- 1 cup of brown rice flour
- 1 cup of old fashioned oats left whole
- 1 tbsp of baking powder
- an optional topping of additional chopped strawberries, chia seeds, a sprinkle of cacao nibs, vegan mini chocolate chips, or drizzle with our easy Cashew Cream Cheese Glaze
Instructions
- To begin, if using frozen strawberries, thaw, drain, and then chop as you would fresh berries. And when using our first choice, fresh strawberries, wash and chop into bite-size chunks suitably sized to distribute throughout the muffin batter.
- Next, preheat your oven to 350º F and line a muffin pan with parchment paper cupcake liners.
- In a large mixing bowl, combine the chopped oats, whole oats, rice flour, and baking powder and set aside.
- Then, place the bananas, milk, ground flaxseeds, peanut butter, maple, prunes, apple cider vinegar, vanilla, salt, and cinnamon into a blender or food processor and blend until combined. Alternatively, mix well by hand. By the way, if you are using whole flaxseed, use a small grinder like this one to grind the flax before using in this recipe.
- Next, pour the blended wet mixture into the combined dry ingredients and stir just until combined. Then, gently fold in the prepared berries.
- Now, spoon the batter into your prepared parchment-lined muffin baking pan to the top of each liner without pressing or smoothing the batter down. Top with the optional chia seeds, cacao nibs, vegan chocolate chips or extra berries for a little extra flavor, beauty, and texture. Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool the baked muffins in the pan for a minute or two and then transfer each muffin to a cooling rack. And once they're completely cool, that's when you may opt to drizzle with a lovely bit of delicious Cashew Cream Cheese Glaze.
